Eggplant parmesan
While I have to say that I don't often order eggplant parmesan in Italian restaurants I tried it this week on a recommendation from a colleague and I loved it. Salute Ristorante Italian on Main Street in Laurel made it different from the usual mushy dish that I remember. They had a crust of melted cheese on the eggplant and a very good tomato sauce. It was the special of the night and I understand that it is not listed on the menu but they will make it if you ask for it. Trust me ask for it. They don't have a liquor license but you can buy wine down the street and Bottle and Cork and bring it with you. I can't talk about the rest of the menu but you go there for the eggplant.

Glad you liked Salute's Eggplant -- best I've ever eaten, too. And as a frequent diner there I can attest to many other great items -- especially the pastas. Meriam's family is Moroccan and they occasionally put her special Moroccan soup on the menu -- if it's there -- also a great choice.
We had a 40 person private party there in Dec and it was great. We had the Chicken parm and it was so good. The chicken was crispy on the outside and moist in the middle. Yum!
