Garlic Lemon Shrimp

  One of the treats in going to Tio Pepe's in Baltimore was the garlic lemon shrimp.  If you haven't gone there you are missing something great.  Just save some of the bread they give you to make sure you can soak up all the left over sauce from this appetizer.
  One of the reasons why I like Tio Pepe's so much is that it is a basement restaurant that reminds me of many of the restaurants of Europe.  The menu is at this link. 
The recipe for this dish is below:
  • 1/2 cup dry white wine
  • 2 tablespoons white wine vinegar
  • 8 garlic cloves, minced
  • 1/2 cup chilled butter, cut into 1/2-inch pieces
  • 2 tablespoons fresh lemon juice
  • 1/2 cup of croutons with Parmesan cheese

  • 2 tablespoons olive oil
  • 1 1/2 pounds uncooked large shrimp, peeled, deveined
  • 2 tablespoons grated lemon peel
  • 1 tablespoon chopped fresh chives
Preparation
Boil wine, vinegar and garlic in small saucepan until mixture is reduced to 1/4 cup, about 4 minutes. Reduce heat to low. Whisk in butter, 1 piece at a time, allowing butter to melt before adding more. Add croutons with Parmesan cheese to cook for a minute or two more. Remove from heat. Stir in lemon juice. Season with salt and pepper. Cover and keep warm. 

Heat oil in large nonstick skillet over high heat. Sprinkle shrimp with salt and pepper. Add to skillet and sauté until shrimp are opaque in center, about 3 minutes.  then transfer shrimp to plates. Drizzle lemon-garlic butter and croutons over shrimp. Sprinkle with lemon peel, chives and serve.

  I went out to Larriland Farms yesterday and picked six pounds of strawberries.  So much more favor than what is in the stores.  Looking forward to the berries later this month and into July.

    Growing up my kids all thought this was the best camp that CA did.  It is a little pricey both each of our kids got to experience it once.

The 2012 Cardboard Boat Float at Lake Kittamaqundi starts today at 9 am.  Interesting to watch the sinking boats.
